Cookies n' Cream Blended & Baked Oats
Ingredients
- 1 C. Dry Uncooked Oats
- 1 Banana
- 1/2 C. Unsweetened Almond Milk
- 2 Tbsp. Natural Sweetener
- 2 Tbsp. Cocoa Powder
- 1 Tsp. Baking Soda
- 1 Tsp. Vanilla Extract
- 1/8 Tsp. Salt
- 2 Oreo Cookies, Smashed/Crumbled
- 2 Oz. Reduced Fat 'Neufchatel' Cream Cheese
- 1 Tsp. Syrup (or Powdered Sugar)
- Optional: More Oreo crumbled for topping.
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of a couple of ramekins with non-stick baking spray; set aside.
- In a blender, food processor, or the cup of an immersion blender, puree the 1 C. Dry Uncooked Oats, 1 Banana, 1/2 C. Unsweetened Almond Milk, 2 Tbsp. Natural Sweetener, 2 Tbsp. Cocoa Powder, 1 Tsp. Baking Soda, 1 Tsp. Vanilla Extract, and 1/8 Tsp. Salt.
- In a small separate bowl, stir together the 2 Oz. Reduced Fat 'Neufachtel' Cream Cheese and 1 Tsp. Syrup.
- Divide the oat mixture evenly between the two ramekins and top divide the cream cheese mixture between the middle of each, allowing it to sink into the oats. Top with any optional oreo cookie pieces.
- Place the dishes into the oven and bake for 25-30 minutes or until set and cooked through.
- Once done, remove from the oven and allow to cool slightly before enjoying right away!
