Ingredients

Honey Mustard Dressing
  • 1/3 C. Extra Virgin Olive Oil
  • 2 Tbsp. Apple Cider Vinegar
  • 3 Tbsp. Honey
  • 1 Tbsp. Dijon Mustard
  • 1 Tsp. Pepper
  • 1/4 Tsp. Salt
Irish Pub Salad
  • 4 Oz. Green Leaf Lettuce
  • 5 Oz. Cherry Tomatoes, Halved
  • 8 Oz. Pickled Green Beans
  • 4 Hard Boiled Eggs
  • 1/2 C. Shredded Irish Cheddar
  • Optional: Rye Chips

Instructions

  1. Place the 1/3 C. Extra Virgin Olive Oil, 2 Tbsp. Apple Cider Vinegar, 3 Tbsp. Honey, 1 Tbsp. Dijon Mustard, 1 Tsp. Pepper, and 1/4 Tsp. Salt into a blender, food processor, or cup of an immersion blender. Puree into smooth dressing and place in the fridge to chill.
  2. Divide the 4 Oz. Green Leaf Lettuce among plates, bowls, or storage containers.
  3. Top the lettuce with the 5 Oz. Cherry Tomatoes, 8 Oz. Pickled Green Beans, 4 Hard Boiled Eggs, and 1/2 C. Shredded Irish Cheddar divided evenly.
  4. Drizzle dressing over each and enjoy right away or store the prepared salads separate from the dressing until ready to enjoy.
