Irish Whiskey Bread Pudding

Ingredients
- 1 C. Reduced Fat Milk
- 2 Tbsp. Butter
- 1/4 C. Sugar
- 1 Whole Large Egg
- 1/2 Tsp. Cinnamon
- 1/2 Tsp. Nutmeg
- 1/4 C. Irish Whiskey
- 3 C. Rye Swirl Bread
- 1/4 C. Raisins
- 1/4 C. Brown Sugar
- 2 Tbsp. Butter
- 1 1/2 Tsp. Irish Whisky
- 1 Tbsp. Whipping Cream
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of 3 ramekins with non-stick baking spray; set aside.
- Place the 1 C. Reduced Fat Milk and 2 Tbsp. Butter into a small sauce pan over medium heat to melt the butter and heat the milk.
- Cut the Rye Swirl Bread into 1" pieces to get 3 cups. Put the 3 C. Rye Swirl Bread in a large bowl.
- Whisk together the 1 Whole Large Egg, 1/2 Tsp. Cinnamon, 1/2 Tsp. Nutmeg, and 1/4 C. Irish Whiskey together in a medium bowl.
- Pour the egg mixture and milk mixture over the Rye Swirl Bread.
- Stir in the 1/4 C. Raisins.
- Divide the bread mixture evenly among the three prepared ramekins.
- Transfer the ramekins to the oven to bake for 40-50 minutes or until the tops are golden brown.
- Once done, remove from the oven and allow them to cool completely.
- While the bread pudding is cooling, place the 1/4 C. Brown Sugar, 2 Tbsp. Butter, 1 1/2 Tsp. Irish Whisky, 1 Tbsp. Whipping Cream into a small sauce pan and heat over medium heat until smooth and the sugar has melted fully.
- Once done, drizzle evenly over each of the bread puddings and enjoy right away!
