Two things are staple dinners in this house almost every week. And that’s tacos (on Tuesdays) and pizza! Yep. That’s right. I eat pizza. A lot of it too. Not a lot as in amount, but a lot as in often. I guess that’s what happens when you have a kid. Pizza and tacos.
I can put almost anything on a pizza crust and it’ll get eaten. And with St. Patrick’s day being a family favorite holiday, I thought now would be the best time to make a reuben inspired pizza! For those of you that may not know, a reuben is a sandwich that’s typically made on a rye bread with pastrami, swiss, sauerkraut, and a thousand island dressing. It’s good stuff!
So, that’s where I started this pizza. A simple raw pizza dough that I topped with all the typical things you’d find in a reuben. I kept this pizza ‘lightened up’ by… well, making it my damn self. But also by choosing my ingredients thoughtfully.
A light thousand island was a must. After that a reduced fat Italian cheese or mozzarella. A FAIR amount of raw, yes… RAW sauerkraut. I like the raw kraut because it’s got those much needed probiotics in it. Some deli corned beef, and of course some caraway seeds to finish it all off with.
And there you have it. A simple and easy to make weeknight pizza for dinner that is festive AND delicious. Plus, it’s about as unique as a pizza can come. I’d say it’s pretty similar to the idea of a cheeseburger pizza or a taco pizza!

• 14 Oz. Raw Pizza Dough
• 1/4 C. Light Thousand Island Dressing
• 1/2 C. Shredded Italian Cheese
• 2 Slices Swiss Cheese, Cut
• 1/2 C. Raw Sauerkraut, Squeezed Dry
• 1/2 C. Chopped Deli Pastrami or Corned Beef
• Caraway Seeds Directions:
Preheat the oven to 400 degrees F. (or whatever temperature your dough needs to cook at) and lay out a piece of parchment paper.
Lightly dust the parchment with flour and roll the dough out to form your pizza crust.
Spread the 1/4 C. dressing onto the crust evenly.
Top the sauce with about half of the shredded cheese and the 2 slices of chopped swiss cheese.
Add on the 1/2 C. sauerkraut, 1/2 C. pastrami, and the remaining cheese.
If a sprinkle of caraway seeds and place the pizza in the oven to bake for about 10-15 minutes or until the edges of the pizza crust are browning and the cheese has melted.
Once done, remove from the oven.
Slice and enjoy right away.
