Red Chile Breakfast Tostada
Say hello to the Red Chile Breakfast Tostada—a dish that takes your morning meal from drab to fab with vibrant flavors and a guilt-free kick.
Ingredients
- 1 (25 Cal.) Flour or Corn Tortilla (I used Sriracha Ranch tortillas.)
- 1/4 C. Red Enchilada Sauce
- 1 Whole Large Egg
- 2 Tbsp. Refried Black Beans
- 1 Tbsp. Guacamole
- 2 Tbsp. Shredded Cheddar Cheese
- 1 Tbsp. Pico or Salsa
- Optional: Hot Sauce, Creamy Jalapeno, etc.
Instructions
- Get Your Tostadas Toasty: Preheat your oven or air fryer to 375 degrees F. Place the 1 (25 Cal.) Flour or Corn Tortilla on a baking sheet and lightly spray with cooking spray or drizzle with olive oil. Bake or air fry for about 5-7 minutes, or until they’re nice and crispy. Keep an eye on it—nobody likes a burnt tostada!
- Cook the Eggs: Place 1/4 C. Red Enchilada Sauce in a very small skillet and heat it over medium-high heat. Crack the egg into the skillet and cover. Lower the heat to medium and cook until done to your liking.
- Assemble the Tostadas: Spread the 2 Tbsp. Refried Black Beans and 1 Tbsp. Guacamole over the toasted tortilla. Top with the egg and enchilada sauce. Then add the 2 Tbsp. Shredded Cheddar Cheese and 1 Tbsp. Pico or Salsa.
- Serve and Savor: Grab a fork and dig in! You’ll love the explosion of flavors with every bite, and you can feel good knowing you’re tackling the day with a nutritious breakfast.
