Banana Foster Baked Oats
Inspired by the classic dessert, this breakfast twist keeps all the warm, caramelized banana goodness while being oh-so-good for you.
Ingredients
- 200 G. Rolled Oats
- 2 Whole Ripe Bananas
- 60 G. PB2 Powder
- 420 Ml. Unsweetened Almond Milk
- 1 Tsp. Baking Powder
- 6 Tbsp. Banana or Banana Foster Greek Yogurt
- 1/4 C. Chopped Pecans (I used 'Banana Bread' flavored pecans.)
- Drizzle Caramel Sauce
Instructions
- Heat Things Up: Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
- Mix Up: Mix together the 200 G. Rolled Oats, 2 Whole Ripe Bananas, 60 G. PB2 Powder, 420 Ml. Unsweetened Almond Milk, and 1 Tsp. Baking Powder.
- Pour One Out: Pour the mixture into the prepared baking dish. (I used my immersion blender to blend the oats a bit because I like a smoother baked oatmeal.)
- Dollop: Drop the 6 Tbsp. Banana or Banana Foster Greek Yogurt around over the top along with the 1/4 C. Chopped Pecans.
- Bake It Good: Place into the oven to bake for about 45 minutes or until the edges are browned and the middle is set.
- Nom Nom: Once done, remove from the oven and allow to cool slightly before drizzling with caramel to enjoy right away or store in the fridge to easy breakfast through the week!
