These are everything you love about tacos—seasoned meat (beef, vegetarian, turkey, or beans), cheese —rolled into a neat little package and air-fried to golden perfection. Crunchy, handheld, and quick, they’re perfect for weeknight dinners, game-day snacks, or a fun appetizer that disappears fast.

These are everything you love about tacos—seasoned meat (beef, vegetarian, turkey, or beans), cheese —rolled into a neat little package and air-fried to golden perfection.

Ingredients

  • 1 Lb. Ground Lean Meat (Beef, turkey, or I used vegetarian.)
  • 1/2 Medium Onion, Chopped
  • 2 Tbsp. Tomato Paste, No Salt Added
  • 1 Tbsp. Taco Sauce or Hot Sauce
  • 2 Tsp. Cumin
  • 1 Tsp. Paprika
  • 1/2 C. Diced Tomato
  • 2 Tbsp. Diced Pickled Jalapeños
  • 1 C. Reduced Fat 2% Pepper Jack Cheese, Shredded
  • 8 Egg Roll Wrappers

Instructions

  1. Lightly coat the basket or racks of your air fryer with non-stick spray and set aside.
  2. Add the 1 Lb. Ground Lean Meat and 1/2 Medium Onion to the skillet. Cook over medium high heat until the meat is browned and the onions are cooked through.
  3. Add in the 2 Tbsp. Tomato Paste, 1 Tbsp. Taco Sauce or Hot Sauce, 2 Tsp. Cumin, 1 Tsp. Paprika. Stir everything together and cook for another few minutes.
  4. Remove the pan from the heat and add in the 1/2 C. Diced Tomato and 2 Tbsp. Diced Pickled Jalapeños.
  5. Stir to combine and set aside to cool slightly.
  6. Lay out an egg roll wrapper and add about 1/4 C. of the meat mixture in the middle. Top with about 1 Tbsp. of the cheese.
  7. Fold two of the ends in and then roll the egg roll up.
  8. Rinse and repeat for the remaining egg rolls.
  9. Lightly spray with non-stick cooking spray (and sesame seeds if desired.) Place them into the air fryer basked or racks and cook at 375 degrees for 6-8 minutes or until browned, crisp, and delicious.
  10. Once done, remove from the air fryer and allow to cool slightly.
  11. Serve warm with your choice of sides!
