This classic dish takes all the nostalgic flavors you love - seasoned ground turkey, crisp lettuce, juicy tomatoes, and the crunch of taco flavored chips on top - and gives them a modern upgrade.
With a lighter dressing that's just as zesty and flavorful as the traditional version, this salad is perfect for a quick weeknight dinner or a fun weekend lunch. So go ahead, take a trip down memory lane while still treating your body right with this delicious and guilt-free Old-Fashioned Taco Salad!
I lightened this salad up by using a lean ground turkey instead of regular or beef. I also used anything salt-free that I could, which included the beans and hotel. Other than that, the reduced fat cheddar was a must along with the fat-free dressing.
A serving of this is enough to be a meal in itself and what wasn’t eaten for dinner was stored away for lunch for the week. Just be sure to keep the lettuce separate or on top of everything else and don’t add the dressing until you’re ready to eat it.
Old-Fashioned Taco Salad
Ingredients
- 1 Lb. Lean Ground Turkey
- 1/2 C. Chopped Red Onion
- 1 (14.5 Oz) Can No Salt Added Black Beans, Drained & Rinsed
- 1 (10 Oz.) Can No Salt Added Rotel
- 2 Tbsp. Taco Seasoning
- 8 1/2 C. Chopped Romaine
- 4 Oz. Low Fat Shredded Cheddar
- 1 Tomato, Diced
- 3 Green Onions, Chopped
- 6 Tbsp. Fat Free French or Catalina Salad Dressing
- 4 Oz. Taco Flavored Tortilla Chips, Crushed
Instructions
- Heat a large skilled over medium-high heat and give it a light spray of non-stick cooking spray.
- Add in the 1 Lb. Lean Ground Turkey and cook until browned, about 5-10 minutes.
- Toss the 1/2 C. Chopped Red Onion in and cook for another couple of minutes or until the onions are starting to become tender.
- Stir in the 1 (14.5 Oz) Can No Salt Added Black Beans, 1 (10 Oz.) Can No Salt Added Rotel, and 2 Tbsp. Taco Seasoning. Season with salt and pepper to taste and cook for another few minutes and until the most of the liquid has cooked out.
- Once done, remove from the heat and set aside to cool.
- Place 1 1/2 C. of lettuce on each plate (or in a container for meal prep.)
- Divide the 4 Oz. Low Fat Shredded Cheddar, 1 Diced Tomato, and 3 Green Onions evenly among the plates/containers.
- Once the meat is cooled, divide it evenly among serving plates and top each with 1 Tbsp. Fat Free Ranch or Catalina Salad Dressing.
- Top with the crushed Taco Flavored Tortilla Chip to enjoy right away or store in a meal prep container (with the meat separate or on the bottom) until ready to enjoy!
