The secret ingredient here is cottage cheese. But, don’t freak out! The combination of cottage cheese, shredded cheese, and a touch of nooch and spices makes this taste just like the real deal. Just be sure you season it and add hot sauce until that queso flavor shines through. This is perfect for dipping and dunking.
I served mine with health conscious baked tortilla chips and some prepared mini bell peppers for scooping this cheese straight into my mouth.
5 Ingredient Fake-so Queso
Ingredients
- 1 C. Low Fat Cottage Cheese
- 1/3 C. Reduced Fat Shredded Cheddar
- 1 Tbsp. Nooch (Nutritional Yeast)
- 1 Tsp. Taco Seasoning
- Hot Sauce to Taste
Instructions
- Place the 1 C. Low Fat Cottage Cheese, 1/3 C. Reduced Fat Shredded Cheddar, 1 Tbsp. Nooch (Nutritional Yeast), 1 Tsp. Taco Seasoning, Hot Sauce to Taste into a blender, food processor, or the cup of an immersion blender.
- Blend down until smooth and creamy. If you need to, add in a splash of water to reach the desired consistency.
- Transfer the cheese mixture to a microwavable bowl and microwave at 30 second increments to warm up.
- Once done, enjoy right away with chips or mini bell peppers!
- I topped mine off with a little fresh pico for color.
