Not all queso is created equal. Although, I don’t think that I could ever turn a queso away. This Pumpkin & Sausage Queso is PERFECT for Fall. It’s loaded with a little bit of pumpkin flavor and a lot of warm spices and a real kick-in-the pants! Naturally, while it’s hatch chile season in Texas, I served mine with some green chile hatch tortilla chips and YUM.
This queso is a bit more on the extra spicy side, what with the added chipotle, spicy sausage, and of course peppers as far as the eye can see.
What can I say? Cheese just makes me the most happy person. And if it’s loaded queso that we’re talking about, I’m in it to win it. As with most cheesy dips, there really isn’t a whole lot to do here to lighten it up. Though I did use a ‘no salt added’ can of rotel instead of the original. I also used a spicy turkey sausage, which gave me a lot more meat for a lot less calories than beef or pork sausage might.
And of course, you’ve got to top it all off with some fresh pico.
Pumpkin & Sausage Queso
Ingredients
- 8 Oz. Hot Turkey Sausage
- 8 Oz. Velveeta Cheese
- 1 (10 Oz.) Can 'No Salt Added' Diced Tomatoes & Green Chiles
- 1 C. Shredded Jack Cheese
- 1/2 C. Pumpkin Puree
- 4 Oz. Diced Green Chiles
- 1 Oz. Chipotle in Adobo
- 1/2 Tsp. Ground Cumin
- 1/2 Tsp. Paprika
- 1/4 Tsp. Cayenne
Instructions
- Cook the sausage in a skillet over a medium-high heat until cooked through and browned.
- Transfer the meat to a small crock pot along with 8 Oz. Velveeta Cheese, 10 Oz. diced tomatoes with green chiles, 1 C. shredded jack cheese, 1/2 C. pumpkin puree, 4 Oz. diced green chiles 1 Oz. chipotle in adobo, 1/2 Tsp. ground cumin, 1/2 Tsp. paprika, and 1/4 Tsp. cayenne.
- Set to a high heat and stir to combine before covering with the lid.
- Allow the cheese dip to melt (about 30 minutes.)
- Once melted, stir well again and serve with dippers!
