Air Fryer Cheeseburger Egg Rolls

Ingredients
- 1 Lb. Extra Lean Ground Beef
- 1/2 Medium Onion, Chopped
- 1/2 C. Dill Pickles, Diced
- 2 Tbsp. Tomato Paste, No Salt Added
- 1 Tsp. Yellow Mustard
- 2 Tbsp. Dill Pickle Juice
- 2 Reduced Sodium Center Cut Bacon Slices, Cooked & Chopped
- 1 C. Reduced Fat 2% Cheddar, Shredded
- 16 Egg Roll Wrappers
- Optional: Sesame Seeds
Instructions
- Lightly coat the basket or racks of your air fryer with non-stick spray and set aside.
- Add the 1 Lb. Extra Lean Ground Beef, and 1/2 Medium Onion into a large non stick pan. Cook over medium high heat until the meat is browned and the veggies are cooked through.
- Add in the 1/2 C. Dill Pickles, 2 Tbsp. Tomato Paste, 1 Tsp. Yellow Mustard, and 2 Tbsp. Dill Pickle Juice. Stir everything together and cook for another few minutes.
- Remove the pan from the heat and add in the 2 Reduced Sodium Center Cut Bacon Slices.
- Stir to combine and set aside to cool slightly.
- Lay out an egg roll wrapper and add about 1/4 C. of the meat mixture in the middle. Top with about 1 Tbsp. of the cheese.
- Fold two of the ends in and then roll the egg roll up.
- Rinse and repeat for the remaining egg rolls.
- Lightly spray with non-stick cooking spray (and sesame seeds if desired.) Place them into the air fryer basked or racks and cook at 375 degrees for 6-8 minutes or until browned, crisp, and delicious.
- Once done, remove from the air fryer and allow to cool slightly.
- Serve warm with your choice of sides!
