Craving for something easy and cheesy? Look no further! This Zucchini Cheeseburger Skillet is easy to make, all in one skillet, and has all the cheesy goodness of a cheeseburger without any of the guilt. I based it off the same idea as my Zucchini Taco Skillet, but used cheeseburger components instead of taco. The end result was this burger in a bowl.
I made sure to load this skillet up with plenty of veggies, zucchini, onion, lettuce, and even some fresh tomato! Like I said, this has everything you love about a cheeseburger, even pickles! It starts out with meat and onion, then there’s tomatoes and seasonings, and it’s all followed up with zucchini and condiments!
This is another great way to enjoy a burger without the bun. It’s also an easy way to enjoy a vegetarian burger bowl; simply swap the beef for ground vegetarian ‘meat’. You could also use a g round turkey breast in place of the beef too!
I topped mine off with a drizzle of yellow mustard, thousand island dressing, and a few sesame seeds. It was DELISH.
Zucchini Cheeseburger Skillet
Ingredients
- 1 Lb. Extra Lean Ground Beef
- 1 C. Diced Red Onion
- 8 Oz. No Salt Added Tomato Sauce
- 8 Oz. No Salt Added Diced Tomatoes
- 2 Diced Zucchini
- 1/4 C. Dill Pickle Relish
- 1/4 C. Cooked & Crumbled Bacon
- 1/2 Tsp. Garlic Powder
- 1/2 Tsp. Onion Powder
- Salt & Pepper to Taste
- 1/2 C. Reduced Fat Shredded Cheddar
- 4 Lettuce Leaves
- 1/4 C. Diced Fresh Tomatoes
Instructions
- Lightly coat the inside of a large skillet with non-stick spray and cook the 1 Lb. beef and 1 C. diced red onion over a medium-high heat until the meat is browned and onion is tender.
- Add in the 8 oz. tomato sauce and 8 oz. diced tomatoes, continue to cook for a few more minutes.
- Stir in the 2 diced zucchini, 1/4 C. relish, 1/4 C. bacon, 1/2 Tsp. garlic powder, 1/2 Tsp. onion powder, and salt & pepper to taste.
- Cook until zucchini is tender.
- Remove from the heat and stir in 1/4 C. of the cheddar.
- Divide the lettuce evenly among bowls and top each with the zucchini cheeseburger mixture.
- Sprinkle each with about 1 Tbsp. shredded cheese and 1 Tbsp. fresh tomatoes.
- Top with a drizzle of 'special sauce', mustard, or sesame seeds and enjoy right away!
