If you’re looking for a quick and easy weeknight dinner, look no further! This Whole Wheat Cheeseburger Casserole comes together in well under an hour and is super simple to make. It is absolutely perfect for busy weeknights and could even be made ahead of time if you really wanted to save time before dinner.
This casserole also only requires 7 ingredients to make it. That’s right. Just seven! It’s made with all the usual burger favorites, beef, cheese, pickle and onion. Top it off with the same condiments that you do your burger and you’ve got yourself a dinner that everyone will love.
To make this casserole a bit more better-for-you I used a whole wheat rigatoni noodle, extra lean ground beef, and reduced fat cheeses. Now, I will say that there were some skeptics in the house, but at the end of it all there was more than one person requisition seconds for dinner.
Did I say that this also makes a whopping 12 servings? Yep. This casserole is heavy and big. So it’ll either feed a crowd or give you plenty for dinner again!
If you want to make it ahead of time, follow the directions below all the way up until being put into the oven. Instead, store covered in the fridge until you’re ready for the final bake in the oven to eat.

• 1 Lb. (16 Oz.) Whole Wheat Pasta (I used rigatoni.)
• 1 Lb. Extra Lean Ground Beef
• 1 Small White Onion, Chopped
• 1 (26 Oz.) Can Condensed Tomato Soup
• 2 C. Shredded Cheddar Cheese
• 1 C. Shredded Mozzarella Cheese
• 1/3 C. Dill Pickle Relish
• Optional Toppings: Ketchup Mustard, Sesame Seeds
Directions:
Cook the pasta according to package directions and preheat the oven to 375 degrees. F.
Lightly coat the inside of a 13x9” baking dish with non-stick spray, set aside.
While the pasta is cooking, place the 1 lb. beef and 1 chopped onion into a large skillet to brown over a medium-high heat.
Once done, drain the pasta and add it back into its pot along with the cooked meat and onion.
Add the 26 Oz. tomato soup, 2 C. cheddar, 1 C. mozzarella, and 1/3 C. relish. Stir to combine.
Transfer the mixture to the prepared baking dish and cover in foil.
Place in the oven to bake for 20 minutes.
Remove the foil and continue to cook for another 10 minutes.
Once done, remove from the oven and serve right away with your favorite burger toppings to enjoy!
