Look, it’s freakin’ hot out ya’ll. It’s so hot that even if I could make traditional s’mores, I don’t think I’d enjoy them quite the same. Eating hot food during the heat of the Texas summer just… isn’t the most novel idea. With that being said, I’ve had frozen hot chocolate before, so why not frozen s’mores?
These s’mores are every bit as delicious as traditional s’mores. That’s because they’re made with the same basic things, just with a few minor adjustments to be freezer fun and friendly.
Graham crackers are same-same. The ‘ice cream’ part is made with a combination of marshmallow fluff, cream cheese, and cool whip. To keep things light, I used a fat free cool whip and a reduced fat cream cheese.
The final part is the chocolate, which is made with chocolate pudding. Again I went with a sugar free version and made mine with an unsweetened almond milk. But, you can use whatever milk floats your boat here. Just be sure to account for any adjustments in the nutritional count!

• 2 (2.1 Oz.) Pkgs. Sugar Free Instant Chocolate Pudding Mix
• 4 C. Cold Unsweetened Almond Milk
• 8 Oz. Fat Free Cool Whip
• 7 Oz. Marshmallow Creme
• 4 Oz. Reduced Fat Neufchâtel Cream Cheese
• 15 Graham , Halved
Directions:
Line a 13x9” baking dish with foil and set aside.
Make the 2 packages of chocolate pudding mix according to the package directions with the unsweetened almond milk.
Pour out into the base of the prepared baking dish and place in the freezer to chill for now.
Beat together the 8 Oz. cool whip, 7 oz. marshmallow creme, and 4 oz. cream cheese until smooch and creamy.
Remove the baking dish from the freezer and top the chocolate layer with the marshmallow mixture and smooth out evenly.
Cover and place in the freezer for at least 6 hours.
Once frozen, remove from the freezer and lift the chocolate and marshmallow from the dish using the foil or parchment.
Line the marshmallow layer with half of the 15 graham crackers.
Slice around the crackers and trim the edges to make your sandwiches.
Flip carefully and line the bottoms with the second half of the graham crackers.
Enjoy right away and store any leftovers in the freezer!
