Ingredients
- 1/2 C. Butter, Room Temperature
- 1/2 C. Creamy Peanut Butter
- 1 C. Brown Sugar
- 2 Whole Large Eggs, Room Temperature
- 2 Tsp. Vanilla Extract
- 2 1/2 C. Flour
- 1/2 Tsp. Baking Soda
- 1 Tsp. Salt
- 1/2 C. Semi-Sweet Chocolate Chunks (or Chocolate Chips)
- 1/4 C. Creamy Peanut Butter
- 1/2 C. Powdered Sugar
- 1 1/2 Tbsp. Butter, Room Temperature
- 1 Tbsp. Heavy Cream
- 1/4 Tsp. Vanilla Extract
- 5 Oz. Marshmallow Fluff
Instructions
- Preheat the oven to 350 degrees F. and line a 8x8" or 9x9" baking dish with parchment paper.
- In the base of a stand mixer, beat together the 1/2 C. Butter, 1/2 C. Creamy Peanut Butter, 1 C. Brown Sugar, 2 Whole Large Eggs, and 2 Tsp. Vanilla Extract.
- Add in the 2 1/2 C. Flour, 1/2 Tsp. Baking Soda, and 1 Tsp. Salt until just incorporated.
- Fold in the 1/2 C. Semi-Sweet Chocolate Chunks.
- Transfer the mixture to the prepared baking dish and press it down to an even layer. Place it in the oven to bake for 25 minutes.
- While that's baking, make the frosting. Place the 1/4 C. Creamy Peanut Butter, 1/2 C. Powdered Sugar, 1 1/2 Tbsp. Butter, Room Temperature, 1 Tbsp. Heavy Cream, and 1/4 Tsp. Vanilla Extract into the clean base of a stand mixer. Beat until light and fluffy.
- Once the bars are done in the oven, remove them and set aside to cool for about 20-30 minutes.
- With the bars cooled, top them with the Peanut Butter Frosting.
- Top that with the 5 Oz. Marshmallow Fluff.
- Enjoy right away or set in the fridge to chill and firm things up if desired.
