These Chocolate Chip Cookie Bars couldn’t be any more delish! They are SUPER chocolatey and have this ooey-gooey texture to them that is similar to a brownie or a blondie. It’s kind of like eating a cookie dough brownie and I am totally here for it. They are decadent and rich and mm-mm good.
They are so good in fact, that my kiddo had one for breakfast this morning and I’m not even upset about it. I might have had one for breakfast too, so it’s not like I can make any judgements. What? I’m an adult. It’s allowed for me to have a cookie for breakfast if I want to.
There isn’t much here to make better-for-you since they’re already pretty simple ingredients that you likely have on hand. But, also… when it comes to baking, sometimes it’s just easier to keep everything as it is. Baking is a science and it’s super easy to lose flavor or texture when you start swapping things out. That being said, I did swap out a lot of the brown sugar and sugar for substitutes that I know and trust.
My go-to natural sweetener is a granulated stevia blend and the brown sugar blend I use is one that measures cup-for-cup like regular brown sugar. You have to be careful because some brands are intended to be halved so that can get tricky. Other than that, these cookie bars are fairly simple and straight forward.
Chocolate Chip Cookie Bars
Ingredients
- 2 Sticks Butter, Room Temperature
- 3/4 C. Brown Sugar Blend
- 1/3 C. Natural Sweetener
- 2 Whole Large Eggs
- 2 C. Flour
- 1 Tsp. Baking Soda
- 1 Tsp. Salt
- 1 1/2 C. Semi-Sweet Chocolate Chips
Instructions
- Preheat the oven to 325 degrees F. and set to convection/fan setting if available. Line an 8x8" or 9x9" baking dish with parchment paper and/or non-stick baking spray; set aside.
- Place the 2 Sticks Butter, 3/4 C. Brown Sugar Blend, and 1/3 C. Natural Sweetener together in the base of a stand mixer.
- Stir in the 2 Eggs, 2 C. Flour, 1 Tsp. Baking Soda, and 1 Tsp. Salt until just blended.
- Fold in the 1 1/2 C. Semi-Sweet Chocolate Chips.
- Transfer the mixture to the prepared baking dish and spread into an even layer.
- Place it into the oven to bake for about 35 minutes or until browned on top. (The center may still be a little jiggly.)
- Once done, remove from the oven and allow it to cool slightly before cutting into 12 equal pieces to enjoy.
