Biscuits and gravy cups? That’s right! Biscuit dough cups that are filled with an easy to make homemade sausage gravy that makes it all perfectly grab-and-go friendly while also being great for the kiddos! While these Skinny Biscuits & Gravy Cups are cute and even impressive, they are actually really simple and easy to make with just a handful of ingredients.
Since there isn’t a whole lot you can do to lighten up this biscuit part (outside of making your own biscuit dough), I did just about everything I could to make the gravy better-for-you. I started the gravy off with a lean turkey breakfast sausage and then swapped in almond milk for regular milk. I also used a reduced fat cheddar in place of regular.
Yes, I like to put just a little bit of shredded cheddar in with my gravy to give it a little more richness and even helping to thicken it up. This gravy is definitely one of my favorites, whether used in these cups or not.
While I used a turkey sausage here, you could use any lean or even vegetarian breakfast sausage of your choosing. I went with turkey because it’s lean and I like it just as much as regular breakfast sausage.
Skinny Biscuits & Gravy Cups
Ingredients
- 1/2 Lb. Lean Turkey Breakfast Sausage
- 1/4 C. Flour
- 2 C. Unsweetened Almond Milk
- 1/2 C. Reduced Fat Shredded Cheddar
- 6 Oz. Refrigerated Canned Biscuit Dough (6 Biscuits)
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a cupcake pan with non-stick baking spray; set aside.
- Cook the 1/2 Lb. sausage in a medium skillet over a medium-high heat until cooked through.
- Stir in 1/4 C. flour and stir, continuing to cook for another minute.
- Slowly whisk in the 2 C. milk and bring it all to a simmer until thickened. Season with salt & pepper to taste.
- Stir in the 1/2 C. shredded cheddar and remove form heat; set aside to cool slightly.
- While the gravy is cooling, cut the biscuits in half and press into the bottom of the prepared pans and as high along the sides of the cupcake indents.
- Divide the gravy evenly among the biscuits cups and place in the oven to bake for 15 minutes, or until the edges are browning.
- Once done, remove from the oven and use a fork or knife to pop the biscuits cups out to enjoy!
