Ingredients
- 1/2 Lb. Fingerling Gold Potatoes, Halved
- 1 1/2 Tbsp. Gochujang
- 1 Tbsp. Rice Vinegar
- 1 Tbsp. Soy Sauce
- 1 1/2 Tsp. Honey
- 1 1/2 Tsp. Minced Ginger
- 1/2 Tsp. Sesame Oil
- 1/2 Tsp. Salt
- 1/2 Tsp. Pepper
- 1/2 Tsp. Garlic Powder
- 2 Garlic Cloves, Minced
- Optional Toppings: Sesame Seeds, Green Onions, Kimchi
Instructions
- Preheat the oven to 425 degrees F. and line a baking sheet with foil or a silicone baking mat for easy clean up.
- Lightly coat the baking sheet with non-stick foil and top with the 1/2 Lb. Halved Fingerling Gold Potatoes. Give the potatoes a spritz of the oil as well and place in the oven to bake for 20 minutes.
- While the potatoes are cooking, mix together the 1 1/2 Tbsp. Gochujang, 1 Tbsp. Rice Vinegar, 1 Tbsp. Soy Sauce, 1 1/2 Tsp. Honey, 1 1/2 Tsp. Minced Ginger, 1/2 Tsp. Sesame Oil, 1/2 Tsp. Salt, 1/2 Tsp. Pepper, 1/2 Tsp. Garlic Powder, and 2 Garlic Cloves together.
- Remove the potatoes from the oven at the end of the 20 minutes and toss them into a bowl with the Gochujang mixture.
- Place the potatoes back into the baking sheet and into the oven to bake for another 10 minutes.
- Once done, remove from the oven and serve up to enjoy right away with your choice of garnish!
