This 'Everything' Salad is just that, everything. It’s based off the famous ‘'Everything' bagels that are known for their ‘everything’ seasoning that you can now buy at just about any grocery store. While I’m not generally a fan of croutons, I decided to grab some of the bagels and use them to make croutons for the salad. That paired with a homemade dijon dressing and some cream cheese makes for one great salad.
I decided to leave this salad meatless, making it a great option for a meatless Monday meal, but feel free to add some chicken or whatever other protein you might enjoy to the salad. This salad would also be great for a meal prep lunch box. Make it ahead of time and enjoy through the week!
I love this salad for so many reasons, but the homemade croutons and the cream cheese bits have to be my favorite parts. They really make this salad stand out and taste amazing. If you’re looking for a great lunch idea, this would be it.

• 2 Oz. Neufchâtel Cream Cheese
• 1 Everything Bagel
• 2 Tbsp. Everything Seasoning
• 8 C. Chopped Lettuce
• 1 Roma Tomato, Diced
• 1/4 Red Onion, Sliced Thin
• 4 Hard Boiled Eggs
Dressing:
• 1/2 C. Extra Virgin Olive Oil
• 1 Tbsp. Lemon Juice
• 1 Tbsp. Dijon Mustard
• 1 Tsp. Honey
• 2 Green Onions, Sliced
• Salt & Pepper to Taste
Directions:
Cube the 2 oz. cream cheese and place in the freezer.
While the cream cheese is getting nice and cold, mix together the 1/2 C. oil, 1 Tbsp. lemon juice, 1 Tbsp. dijon, 1 Tsp. honey, 2 green onions, and salt & pepper to taste. Set aside in the fridge to chill.
Preheat the oven to 350 degrees F. and line a baking sheet with foil or a silicone mat.
Cut the bagel into 16 pieces and spread in a single layer on the prepared baking sheet. Give them a light spritz of non-stick cooking spray.
Place in the oven to bake for 10 minutes. Flip at the end of the 10 minutes and continue to bake for another 5 minutes or until browned and crisp.
While the bagels are baking, remove the cream cheese from the freezer. Cube into an even amount. (I got about 12 cubes.)
Place the 2 tbsp. everything seasoning into a shallow dish and roll each cream cheese cube in the seasoning blend to coat. Set aside back in the fridge or freezer.
Once the bagels are done and have cooled slightly, start to put your salads together.
Divide the 8 C. lettuce, 1 diced tomato, and 1/4 red onion evenly among bowls or plates.
Top each with 1 halved hard boiled egg, 1/2 oz. of the cream cheese, 4 pieces of the bagel, and about 2 Tbsp. of the dressing.
Enjoy right away! To meal prep, merely keep the dressing separate until ready to eat.
