This week we’re finally going ‘back to school’. I made the tough decision to start my little one with learning online at least for the first week, and maybe even on to the first semester. There is no other reason than the fact that I work from home myself and have for years, so the idea of her doing school online here at the start, isn’t really such a ‘big deal’. Even so, it’s still BACK TO SCHOOL. Which means any and all things involved in that. Even breakfast!
Of course, with our first cold front blowing in on the day she starts school, I thought it would be the perfect opportunity to make some Fall-centric granola for breakfast. This Apple Spice Granola is gluten free, dairy free, vegetarian, and vegan too.
This granola is LOADED up with apples and spices to give a nice warm taste that is perfect for a part of just about any breakfast. There’s real apples in here too, baked right in with the oats. You could substitute some of the oats for nuts if you really wanted, but I was trying to keep this granola as simple and light as possible.
One of the best parts is, this granola can be made with very few ingredients, most of which you likely already have on hand in your kitchen. Oats, spices, and apples, that’s pretty much it!

• 1/4 C. Maple Syrup
• 1/4 C. Oil
• 2 Tsp. Vanilla Extract
• 1 1/2 Tsp. Ground Cinnamon
• 1/4 Tsp. Salt
• 1/4 Tsp. Chia Seeds
• 1/4 Tsp. Ground Ginger
• 1/4 Tsp. Ground Nutmeg
• 1/4 Tsp. Ground Cloves
• 3 1/2 C. Oats
• 1/2 Green Apple, Diced
• 1/2 Pink Apple, Diced
Directions:
Preheat the oven to 275 degrees F. and line a baking sheet with foil or a silicone baking sheet; set aside.
Whisk together the 1/4 C. syrup, 1/4 C. oil, 3 Tsp. vanilla, 1 1/2 Tsp. cinnamon, 1/4 Tsp. salt, 1/4 Tsp. chia, 1/4 Tsp. ginger, 1/4 Tsp. nutmeg, and 1/4 Tsp. cloves until well blended.
Stir in the 3 1/2 C. oats, 1/2 diced green apple and 1/2 diced pink apple.
Spread the mixture out onto the prepared baking sheet and bake for 20 minutes.
Stir it all up and bake for another 20 minutes.
Once done, remove from the oven and allow to cool completely.
Store in an airtight container for up to 2 weeks to enjoy.
