These Meaty Italian Stuffed Zucchini Boats end up being naturally gluten free and super tasty and delicious. You can even make them ahead of time up until being baked. Just cover and store in the fridge then bake them up when you’re ready to enjoy!
Meaty Italian Stuffed Zucchini Boats
Ingredients
- 2 Large Zucchinis, Cut in Half
- 1 Tsp. Extra Virgin Olive Oil
- 1/2 Tsp. Italian Seasoning
- Salt & Pepper to Taste
- 1 Lb. Italian Turkey Sausage
- 1/4 C. Chopped Fresh Parsley
- 2 Garlic Cloves, Minced
- 1/2 Tsp. Italian Seasoning
- 2 C. Marinara Sauce
- 1/2 C. Shredded Fat-Free Mozzarella
- Salt & Pepper to Taste
- Optional Garnish: Grated Parmesan & Chopped Parsley
Instructions
- Preheat the oven to 350 degrees F. and line a baking sheet with foil or a silicone baking mat.
- Scoop out the middle of the 2 Large Zucchinis and drizzle them with 1 Tsp. Extra Virgin Olive Oil and 1/2 Tsp. Italian Seasoning. Set them on the prepared baking pan and place in the oven to bake for about 12 minutes.
- While the boats are baking, place the 1 Lb. Italian Turkey Sausage into a large skillet and cook to brown over a medium-high heat, about 5 minutes.
- Once the meat is browned, add in the 1/4 C. Chopped Fresh Parsley, 2 Garlic Cloves, and 1/2 Tsp. Italian Seasoning. Cook for a minute.
- Add in the 2 C. Marinara Sauce and bring it all to a bubble.
- When it's good and hot, transfer half the mixture to the bottom of an 8x8" or 9x9" baking dish.
- Once the zucchini are done, remove them from the oven and immediately transfer to the baking dish. Set the oven to broil.
- Top with the remainder of the meat sauce and the 1/2 C. Shredded Fat-Free Mozzarella.
- Place the dish into the oven to broil for 3-5 minutes or until the cheese is melted.
- Once done, remove from the oven and enjoy right away!
