You can make these ahead and store them in your fridge to reheat and eat through the week for breakfast. I like to serve mine with fresh fruit. It’s hearty and filling enough to get me through to lunch time, but a half portion would be a good dessert or snack alternative!
I like to make mine with an unsweet vanilla almond milk, but regular works just as well.
Oatmeal Cookie Blended & Baked Oats
Ingredients
- 1 C. Dry Uncooked Oats
- 1 Tsp. Baking Soda
- 1 Banana
- 1/2 C. Unsweetened Almond Milk
- 2 Tbsp. Brown Sugar Substitute
- 1 Tsp. Vanilla
- 1/8 Tsp. Salt
- 1/4 C. Raisins
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of a couple of ramekins with non-stick baking spray; set aside.
- In a blender, food processor, or the cup of an immersion blender, puree the 1 C. Dry Uncooked Oats, 1 Tsp. Baking Soda, 1 Banana, 1/2 C. Unsweetened Almond Milk, 2 Tbsp. Brown Sugar Substitute, 1 Tsp. Vanilla, and 1/8 Tsp. Salt together.
- Stir in the 1/4 C. Raisins.
- Divide evenly between the two ramekins and top with a few more raisins if desired.
- Place the dishes into the oven and bake for 25-30 minutes or until set and cooked through.
- Once done, remove from the oven and allow to cool slightly before enjoying right away!
