I’m pretty much in love with jar salads right now. They’re just so easy to toss a few together and have them ready to grab-and-go for busy day lunches. This Green Goddess Jar Salad is probably one of my most favorites of the ones that I’ve made so far. It’s light and has a really good mix of textures and flavors between the lettuce, quinoa, tangy pickled onions, and feta cheese too!
As with any jar salad, the layering here is really important. You want to be sure to keep the lettuce and feta up off the dressing at the bottom. When you’re ready to eat it, you just give it a quick shake and either eat straight out of the container or pour out onto a bowl or salad plate.
I used a pre-made green goddess salad for my own ease this time, but you could definitely make your own if you really wanted to. I also used some leftover quick pickled red onions that I had on hand from a few days ago with those veggie wraps.
This salad is plenty filling and delicious without being heavy. Which is honestly one of my favorite things about quinoa. These stay good in the fridge for anywhere from 3-5 days depending on your lettuce!
Green Goddess Jar Salad
Ingredients
- 8 Tbsp. Green Goddess Dressing
- 1 (14.5 Oz.) Can Chickpeas, Drained & Rinsed
- 4 Celery Stalks, Chopped or Diced
- 4 Oz. Cooked Quinoa
- 1/2 C. Sliced Pickled Red Onion
- 8 Tbsp. Fat Free Feta Cheese Crumbles
- 8 Large Romaine Lettuce Leaves, Chopped
Instructions
- Set out 4 salad containers and place 2 Tbsp. of the Green Goddess Dressing in the bottom of each along with the chickpeas divided evenly, and 1 chopped celery stalk per container.
- Divide the 4 Oz. Cooked Quinoa evenly between the jars and top that with the 1/2 C. pickled red onions divided evenly as well.
- Finally, place 2 Tbsp. feta into each jar and top it all off with the lettuce divided evenly.
- Once done, cover and place in the fridge until ready to enjoy.
