Blended to creamy perfection and baked with care, these oats are not only a treat for the taste buds but also a nutritious way to start your day. With its vibrant red hue and irresistible aroma, our Red Velvet Blended & Baked Oats are sure to become a new breakfast staple in your home.

I like to add a few chocolate chips on top, but it really isn’t needed. In the end you wind up with fluffy baked up red velvet oats that are stuffed with a slightly sweetened cream cheese filling that is perfectly melty and delicious. Making these ahead of time means you have the perfect reheat and eat breakfast on busy mornings. Just be sure to store them covered in the fridge.

These would also make for a really nice breakfast in bed on Valentine’s Day! Just serve with some fresh fruit and some hot coffee or tea and you have a full, delicious, and beautiful breakfast for your love.

Red Velvet Blended & Baked Oats

Red velvet in the form of oatmeal makes for the perfect breakfast bite! Oats blended with cocoa and red then stuffed with a sweetened cream cheese.

Ingredients

  • 1 C. Dry Uncooked Oats
  • 1 Banana
  • 1/2 C. Unsweetened Almond Milk
  • 2 Tbsp. Natural Sweetener
  • 1 Tbsp. Cocoa Powder
  • 1 Tsp. Baking Soda
  • 1 Tsp. Vanilla Extract
  • 1/8 Tsp. Salt
  • Red Food Coloring
  • 2 Oz. Reduced Fat 'Neufachtel' Cream Cheese
  • 1 Tsp. Syrup
  • Optional: Chocolate Chips

Instructions

  1. Preheat the oven to 375 degrees F. and lightly coat the inside of a couple of ramekins with non-stick baking spray; set aside.
  2. In a blender, food processor, or the cup of an immersion blender, puree the 1 C. Dry Uncooked Oats, 1 Banana, 1/2 C. Unsweetened Almond Milk, 2 Tbsp. Natural Sweetener, 1 Tbsp. Cocoa Powder, 1 Tsp. Baking Soda, 1 Tsp. Vanilla Extract, 1/8 Tsp. Salt together, and red food coloring.
  3. In a small separate bowl, stir together the 2 Oz. Reduced Fat 'Neufachtel' Cream Cheese and 1 Tsp. Syrup.
  4. Divide the oat mixture evenly between the two ramekins and top divide the cream cheese mixture between the middle of each, allowing it to sink into the oats. Top with any optional chocolate chips.
  5. Place the dishes into the oven and bake for 25-30 minutes or until set and cooked through.
  6. Once done, remove from the oven and allow to cool slightly before enjoying right away!
