These sloppy goes make use of plant based meat substitute and a load of veggies that include plenty of onion, bell pepper, and garlic too! It comes together quickly with little fuss and don’t worry about the ingredient list, it’s all mostly spices and seasonings that you likely already have on hand.
I served mine over a toasted brioche bun and some kettle cooked salt and vinegar chips, but more fresh veggies on the side would be great too.
Meatless Sloppy Joes
Ingredients
- 12 Oz. Ground Meat Substitute (Impossible Beef)
- 1 Small White Onion, Diced
- 1 Green Bell Pepper, Diced
- 4 Garlic Cloves, Minced
- 1 C. Reduced Sodium Vegetable Broth
- 1 Tbsp. Cornstarch
- 1/4 C. Tomato Paste
- 2 Tbsp. Ketchup
- 2 Tbsp. Worcestershire Sauce
- 1 1/2 Tsp. Bouillon
- 1 Tsp. Dijon Mustard
- 1 Tsp. Dried Oregano
- 1 Tsp. Dried Parsley
- 1/2 Tsp. Dried Basil
- 1/2 Tsp. Paprika
- 1/4 Tsp. Red Pepper Flakes
- Salt & Pepper to Taste
Instructions
- Lightly coat the inside of a large skillet with non-stick spray and set it over a medium-high heat. Add in the 1 Lb. Ground Meat Substitute, 1 Small White Onion, and 1 Green Bell Pepper. Cook until the 'meat' is browned and the veggies are tender.
- Add in the 4 Garlic Clove and continue to cook for another minute or two.
- In a small bowl, stir together the 1 C. Reduced Sodium Vegetable Broth and 1 Tbsp. Cornstarch. Add the slurry to the skillet along with the 1/4 C. Tomato Paste, 2 Tbsp. Ketchup, 2 Tbsp. Worcestershire Sauce, 1 1/2 Tsp. Bouillon, 1 Tsp. Dijon Mustard, 1 Tsp. Dried Oregano 1 Tsp. Dried Parsley, 1/2 Tsp. Dried Basil, 1/2 Tsp. Paprika 1/4 Tsp. Red Pepper Flakes, and Salt & Pepper to Taste. Stir it all together and bring it to a bubble.
- Reduce heat to medium and allow it to cook until the mixture has thickened.
- Once done, remove from the heat and serve right away on your bun of choice!
