So, I finally got a pressure cooker for my birthday this year! I've only wanted one for about 5 years now, hah. I've had so much fun playing around with it and learning how to use it. And I gotta say, I'm super impressed and can totally see what all the hype is about! So far, I've made a lot of really yummy stuff in it that would normally take me several hours to make in a slow cooker.
My little blonde mind is blown, y'all! How in the world does this contraption manage to cook things so quickly?!...
After a bit of a whirl wind trip to Dallas and back to Austin. And currently with a house full of two very energetic 7 year olds, momma needs some greens. How else am I going to keep up with my daughter and my nephew? With the influx of summer heat and all the madness and chaos around me right now, I figured there was no better time than now for this cool crisp veggie loaded green sandwich!
Of course, this isn't the most 'kid friendly' sandwich; unless you lucked out and have the least picky eater on the planet. So this is for the mommas, the papas, and any other parental/guardian unit that's in need of a way to power through the rest of the day. The kiddos around here opted for turkey and cheese. But, me? I'm strong, happy, and ready to go with this bad boy right here...

Today is bittersweet! It's the last day of my daughter being in the first grade. Eek! Where does the time go? Somewhere in between rushing her around to school this morning and dealing with a bit of a family emergency, I had to find time to get some food in my system. Since we're on the verge of summer, I thought it would be a great time to make myself a fun summer inspired breakfast scramble!
I'm calling this a Summer Breakfast Scramble, mostly because I'm making use of some summer greens, light feta cheese, and some tomatoes to boot. I've been on a bit of a breakfast kick lately, can you tell? It's just been eggs on top of eggs on top of eggs around here for the whole week. You can't blame me! The farm fresh eggs got me like 'whoa'...
So, this salad today is actually somewhat inspired by my dad who is having some health issues at the moment. We're not entirely sure what's going on, but he's been told to eat better for the time being until his next round of testing. One thing he was told to do was to 'stay away from white stuff', which clearly isn't something I stuck to here because I have to have cheese in my life. I literally think I might explode if I didn't have at least a bit of cheese every day.
What can I say? I've got to be honest here! I'm one that believes strongly in that you can enjoy everything as part of a healthy diet as long as it's in moderation. (Except of course if it's something you've been warned of by a professional.)
A few days back now, my dad and aunt were chatting at me on Facebook about how my dad is now eating more healthy and that he had tried quinoa. He wasn't a huge fan.
