I'm always looking for ways to get more fresh vegetables into my life and this Southwest Egg Bake is no exception. This small sort of 'crustless quiche for one' is a perfect little breakfast that's packed with flavor and also happens to be a powerhouse of super foods and nutrition.

To start this egg bake off I loaded it up with fresh cabbage, kale, radishes and carrots from the Southwest Eat Smart Gourmet Vegetable Salad Kit. I then added in an egg and some egg whites and followed it all up with crunchy corn and just the right amount of shredded cheese. Everything here, except for the egg and milk, came from the kit; making this dish super easy to toss together and have ready to bake in less than 5 minutes.
I really have had so much fun in playing around with all these different types of Eat Smart Gourmet Vegetable Salad Kits. And honestly, I don't think that I could pick out a favorite one because I love them all for different reasons!

My brother happened to be around, so I made him one of these and he gave me the thumbs up; which is always good to know since he's sort of my personal food critic and also tends to be the recipe guinea pig. He agreed that it's reminiscent of a quiche but on a smaller and individual scale.

Ingredients:
3 Oz. Eat Smart Southwest Gourmet Vegetable Salad Kit
1 Whole Large Egg
2 Large Egg Whites
1 Tbsp. Fat Free Milk
Pinch Salt-Free Southwest Seasoning
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of an oven safe ramekin with non-stick cooking spray.
Place about 3 oz. of the leafy greens into the bottom of the prepared dish.
In another small bowl, whisk together the whole large egg, 2 egg whites, 1 Tbsp. Fat Free Milk, and Southwest Seasoning.
Pour the egg mixture over the greens and top with some of the corn, shredded cheddar, and tortilla strips from the Eat Smart Southwest Gourmet Vegetable Salad Kit.
Place the dish into the oven to bake for 20-30 minutes or until the egg is set and cooked through.
