I made these lighter by using an unsweetened almond milk, but really the other ingredients are fairly simple and needed to make these rolls rise and for the yeast to react accordingly.

Skinny Homemade Roadhouse Rolls
Ingredients
- 1 1/4 C. Hot Unsweetened Almond Milk
- 1/3 C. Sugar
- 1 Packet Active Dry Yeast
- 1/4 C. Butter, Room Temperature
- 1 Whole Large Egg, Room Temperature
- 1 Tsp. Salt
- 3 1/2 C. Flour
- Optional: Additional Butter For Topping
Instructions
- Place the 1 1/4 C. Hot Unsweetened Almond Milk and 1/3 C. Sugar into a small bowl together. Sprinkle the 1 Packet Active Dry Yeast over the top and allow it to sit for about 5 minutes or until it's foamy.
- Transfer the yeast mixture to a the base of a stand mixer fitted with the paddle attachment. Add in the 1/4 C. Butter, 1 Whole Large Egg, 1 Tsp. Salt and 2 C. of the Flour. Beat until smooth.
- Reduce speed and gradually add in the rest of the 1 1/2 C. Flour until a ball of dough forms. Increase the speed slightly and continue to beat for 2-3 minutes. The dough should be tacky but not sticky. If It's too sticky, add in flour 1 Tbsp. at a time until the desired consistency is reached.
- Lightly coat a large bowl with non-stick spray and place the dough into the bowl. Toss to coat. Cover with a tea towel or plastic wrap and place in a warm dry place to rise and double in size. (About 45-60 minutes.)
- Punch the dough down gently and lightly flour a work surface and prepare two baking sheets with parchment or silicone baking mats. Turn the dough out into the flour and roll it out to be about 12x8" and 1/2" thick.
- Cut the dough into 24 pieces as evenly as you can. Transfer to the prepared baking sheets.
- Cover with a clean tea towel and place in a warm place to rise and double in size again. (Another 45-60 minutes.)
- Preheat the oven to 350 degrees F. Place the baking sheet into the oven to bake for about 12-15 minutes or until the edges are turning golden brown.
- Once done, remove from the oven and brush with melted butter if desired to enjoy!
