Soft Boiled Spiced Eggs
Ingredients
- 6 Whole Large Eggs
- 1 1/2 Tbsp. Butter
- 1/4 C. Minced Garlic
- 3 Tsp. Brown Sugar
- 2 1/4 Tsp. Cajun Seasoning
- 1 1/2 Tsp. Lemon Pepper Seasoning
- 1 Tsp. Smoked Paprika
- 1/2-1 Tsp. Red Chili Flakes
- 1/2 Tsp. Onion Powder
- 3/4 C. Unsalted/Low Sodium Vegetable Broth
- 1/4 Lemon, Juiced
- Salt & Pepper to Taste
- Chopped Fresh Parsley to Garnish
Instructions
- Fill a medium pot with water and set it over high heat to bring to a boil. Once boiling, add in the eggs carefully and cook for seven minutes. While cooking, prepare a large bowl with water and ice in it for the eggs to have an ice bath. After the seven minutes are up, transfer to the eggs to the prepared ice bath.
- While the eggs are chilling, place the 1 1/2 Tbsp. Butter and 1/4 C. Minced Garlic into a small sauce pan and heat over a medium-high heat. Add in the 3 Tsp. Brown Sugar, 2 1/4 Tsp. Cajun Seasoning, 1 1/2 Tsp. Lemon Pepper Seasoning, 1 Tsp. Smoked Paprika, 1/2-1 Tsp. Red Chili Flakes, and 1/2 Tsp. Onion Powder. Cook for a few minutes until slightly thickened.
- Add in the 3/4 C. Unsalted/Low Sodium Vegetable Broth, 1/4 Lemon Juice, and Salt & Pepper to Taste. Bring to a boil then reduce heat to simmer for about 5-10 minutes to reduce slightly again. Once done, remove from heat and set aside.
- Gently peel the eggs and place them into a medium bowl. Pour the garlic mixture over them to enjoy right away or cover and store in the fridge for up to 3 days.
