Single Serve Baked Pumpkin Oatmeal
Ingredients
- 1/2 C. Rolled or Old-Fashioned Oatmeal
- 1/2 C. Unsweetened Almond Milk
- 1/4 C. Pumpkin Puree
- 1 1/2 Tbsp. Natural Sweetener
- 1 Tbsp. Nut Butter
- 1/4 Tsp. Ground Cinnamon
- 1/4 Tsp. Pumpkin Pie Spice
- 1/4 Tsp. Baking Powder
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a ramekin or small baking dish with non-stick baking spray; set aside.
- Place the 1/2 C. Rolled or Old-Fashioned Oatmeal, 1/2 C. Unsweetened Almond Milk, 1/4 C. Pumpkin Puree, 1 1/2 Tbsp. Natural Sweetener, 1 Tbsp. Nut Butter, 1/4 Tsp. Ground Cinnamon, 1/4 Tsp. Pumpkin Pie Spice, and 1/4 Tsp. Baking Powder into a blender, food processor, or the cup of an immersion blender and puree down until nearly smooth.
