I’ve made blended oats in the past and they always turn out really well. Honestly, I’m not sure why I don’t make them more often than I do because they’re so simple, healthy, and easy to make. These Pineapple Upside-Down Blended & Baked Oats basically merge blended oats with a pineapple upside down cake. So you get to have your cake and eat it too.
This breakfast treat starts out with brown sugar, pineapple, and a cherry on the bottom, then you layer on the pineapple infused blended on, and another layer of brown sugar, pineapple, and cherry. Then you bake it all together and come out with this tasty breakfast that’s sure to impress!
I kept these oats light by using a brown sugar stevia blend. I also used pineapple that was in it’s own juice, none of that syrup garbage. Other than that, these oats are made with super simple ingredients that end up baking into a fluffy oat and banana based breakfast that will be hard to pass up.
These can be made ahead of time and stored in the fridge for a few days. When you’re ready to enjoy, just take them out and give them a quick reheat in a toaster oven or microwave and enjoy just as you would have fresh out of the oven!
Pineapple Upside-Down Blended & Baked Oats
Ingredients
- 4 Tbsp. Natural Sweetener/Brown Sugar Blend, Divided
- 1 (8 Oz.) Can Sliced Pineapple in Juice
- 4 Maraschino Cherries
- 1 C. Dry Uncooked Quick Oats
- 1 Tsp. Baking Soda
- 1 Banana
- 1 Tsp. Vanilla
- 1/8 Tsp. Salt
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekin dishes with non-stick baking spray.
- Sprinkle 1 Tsp. brown sugar blend into the bottom of each ramekin, followed by one pineapple slice and one cherry.
- Place the 1 C. Dry Uncooked Oats, 1 Tsp. Baking Soda, 1 Banana, 1 Tsp. Vanilla, 1/8 Tsp. Salt, and the juice from the can of pineapple (should be 1/2 C.) into a blender or cup of an immersion blender. Puree down until mostly smooth.
- Divide the oat mixture evenly among the bowls.
- Top each with another slice of pineapple, a cherry, and another sprinkle of 1 Tsp. brown sugar blend.
- Place in the oven to bake for 25-30 minutes.
