I’ve been real on about Baked & Blended Oats lately, if you couldn’t tell by my Oatmeal Cookie or Red Velvet options in just the last few weeks. This Cookie Monster version is one for the books. It’s over the top and based on the Cookie Monster himself with Oreo and chocolate chip cookie crumbs on top, cookie dough stuffed in the middle, and of course the famous blue coloring!
Cookie Monster Baked & Blended Oats
Ingredients
- 1 C. Dry Uncooked Oats
- 1 Banana
- 1/2 C. Unsweetened Almond Milk
- 2 Tbsp. Natural Sweetener
- 1 Tsp. Baking Soda
- 1 Tsp. Vanilla Extract
- Blue Food Coloring
- 1/8 Tsp. Salt
- 2 Tbsp. Semi-Sweet Chocolate Chips
- 0.5 Oz. Refrigerated Chocolate Chip Cookie Dough
- O ptional: Chocolate Chip Cookie and Oreo Crumbs
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of a couple of ramekins with non-stick baking spray; set aside.
- In a blender, food processor, or the cup of an immersion blender, puree the 1 C. Dry Uncooked Oats, 1 Banana, 1/2 C. Unsweetened Almond Milk, 2 Tbsp. Natural Sweetener, 1 Tsp. Baking Soda, 1 Tsp. Vanilla Extract, 1/8 Tsp. Salt, and a few drops of blue food coloring.
- Stir in the 2 Tbsp. Semi-Sweet Chocolate Chips.
- Divide the oat mixture evenly between the two ramekins. Split the chocolate chip cookie dough in half and place each into the center of one of the ramekins.
- Top with any Oreo and Chocolate Chip Cookie Crumbs if desired.
- Place the dishes into the oven and bake for 25-30 minutes or until set and cooked through.
- Once done, remove from the oven and allow to cool slightly before enjoying right away!
