This casserole is super easy to make, filling, and tasty too! So much so that my kiddo was even considering trying a bite even though they claim to not like cauliflower despite having not tried it recently enough in their life to know if they do like it or not. Kids. Either way, this casserole only takes a handful of ingredients and basically no hands on time at all.
You don’t feel like you’re missing anything at all here when it comes to pizza goodness. Especially if you add on your favorite pizza toppings. I went super simple with turkey pepperoni!
Cauliflower Pizza Casserole
Ingredients
- 1 Head of Cauliflower, Cut into Florets
- 1 Tbsp. Olive Oil
- 1 Tbsp. Hot Sh!t Seasoning
- 24 Oz. Marinara Sauce
- 2 C. Reduced Fat Shredded Mozzarella
- Optional Toppings: Turkey Pepperoni, Olives, Mushrooms, etc.
Instructions
- Preheat the oven to 425 degrees F. and lightly spray the inside of a 13x9" baking dish with non-stick spray.
- Place the 1 Head of Cauliflower florets, 1 Tbsp. Olive Oil, and 1 Tbsp. Hot Sh!t Seasoning into the baking dish and toss to coat the cauliflower evenly in the oil and seasoning.
- Transfer the baking dish into the oven to bake for 20-25 minutes.
- Toss the cauliflower around a bit then top with the 24 Oz. Marinara sauce and sprinkle the 2 C. Reduced Fat Shredded Mozzarella over it all. Top with any other desired pizza toppings.
- Place the dish back into the oven to bake for another 15 minutes or so until the cheese is melted and browning.
- Once done, remove from the oven and divide evenly among bowls to enjoy right away!
