Ever crave pizza but not all the guilt that goes along with it?

I think though, that I may have finally found a way to sate that pizza urge without all the guilt to follow. This cauliflower pizza dip is low-carb, gluten-free, keto-friendly, and... wait for it... absolutely freaking amazing.
You can trust me when I say that no one who eats this dip will ever guess that it's better-for-you in any way, shape, or form. That's because it feels rich and decadent. It feels naughty. It feels so bad... but tastes so good.
A few months back when I was officially doing keto cooking, I came across a recipe for a pizza dip. It was pretty dang good but I couldn't help but feel like something was missing. After some deliberating, I finally came to the conclusion that it was missing the sweet tang of pizza sauce. I mean... who can have pizza without the sauce? Well, not me!
So when going back through the recipe, that was one of the first things I added in - full well knowing it would add a carb or two with each serving. But, I was willing to make that sacrifice in the name of real pizza flavor.
This dip is smooth and creamy and perfectly dipable, drinkable, and spreadable. I served mine hot with pepperoni chips and some 'pizza chips'. But, it would also be good with veggie dippers!

• 1 Medium Head of Cauliflower, Cut into Florets
• 1/4 C. + 1/2 C. Shredded Italian Cheese Blend
• 8 Slices Turkey Pepperoni + 12 More (Regular for Keto-Friendly.)
• 2 Tbsp. Heavy Cream
• 1 Tbsp. Unsalted Butter
• 1/2 C. Pizza Sauce
• 1/4 C. Shredded Italian Cheese Blend
• Salt & Pepper to Taste
Directions:
Bring a large pot of water to a boil and place the cauliflower in to cook for about 5-10 minutes or until tender. Once done, remove the cauliflower with a slotted spoon and transfer into a blender or food processor with 1/4 C. shredded italian cheese, 8 slices of pepperoni, 2 Tbsp. heavy cream, 1 tbsp. butter. Blend until smooth and season with salt and pepper to taste; set aside. Preheat the oven to 375 degrees F. and spread about half of the cauliflower into the bottom of an oven safe 'dip' dish of choice. Top with 1/2 C. pizza sauce, followed by a second layer of the remaining cauliflower puree. Sprinkle the 1/2 C. remaining cheese over the top and layer on the 12 pepperoni slices over the cheese. Cover with foil and place the dish into the oven to bake for about 20 minutes, or until heated through and the cheese has melted. Serve right away and enjoy.
