Happy New Year! We’re kicking 2023 off with a twist on an American staple - pizza! Yes, you can have your pizza and eat it too. This Cheesy Cauliflower Pizza Casserole is the best of both the world of pizza and the world of eating better. It’s cheesy, saucy, low carb, easy to make, and delicious too! Another good part is that you don’t need many ingredients to make this casserole either.
You can also customize this casserole to suit your specific pizza tastes. I went with turkey pepperoni since it’s just as good as any pepperoni but has fewer calories, but you could also go with jalapeño, olives, sausage, etc.
If you wanted, you could even get this casserole set up ahead of time and then do a final bake when you’re ready to enjoy it. The only difference would be that it may need a little bit longer for the final bake to get it nice, hot, and bubbly.
This is definitely a great dinner to have on hand for pizza night as you’re trying to stick to those new year’s resolutions. You get all the things you love about a pizza without the guilt. Which has to be my favorite part about this dish!
Cheesy Cauliflower Pizza Casserole
Ingredients
- 1 Head Cauliflower, Cut into Florets
- 2 Tbsp. Extra Virgin Olive Oil
- 1 Tsp. Italian Seasoning
- Salt & Pepper
- 1 (24 Oz.) Jar Marinara
- 2 C. Shredded Reduced Fat Mozzarella
- 16 Slices Pepperoni Turkey
Instructions
- Preheat the oven to 425 degrees F. and toss the 1 Head Cauliflower, 2 Tbsp. Extra Virgin Olive Oil, 1 Tsp. Italian Seasoning, and Salt & Pepper together in an 8x8" or 9x9" baking dish.
- Place it into the oven to bake for 25 minutes.
- Remove the dish from the oven and give the cauliflower a good stir.
- Top with the 1 (24 Oz.) Jar Marinara, 2 C. Shredded Reduced Fat Mozzarella, and 16 Slices Pepperoni Turkey.
- Place it back in the oven for another 10-15 minutes or until hot, bubbly, and the cheese is melted.
- Once done, remove from the oven and enjoy right away!
