These Naked Greek Chicken Nachos are a flavorful and low carb twist on a classic favorite. This dish features tender chicken breast seasoned with herbs and spices, and then paired with a generous serving of hummus and feta cheese. These low-carb gluten-free nachos were definitely a big hit on the dinner table here. I even drizzled a little bit of the oil from my hummus over the top for a little bonus of tasty goodness. These don’t really ‘pick up’ like nachos and are more of a workable nacho, but trust me, you won’t be put off by that!
I will definitely be making these again sometime soon. They’re a great way to use over leftover bits and pieces from the fridge. Especially if you have any tomatoes or zucchini hiding out in the kitchen.
Naked Greek Chicken Nachos
Ingredients
- 1 Lb. Boneless Skinless Chicken Breast, Cut into 1" Cubes
- 1 Tbsp. Hot Sh!t Seasoning
- 1 Tbsp. Olive Oil
- 1/2 Zucchini Squash, Cubed
- 1/2 C. Hummus
- 2.5 Oz. Crumbled Fat Free Feta
- 8 Cherry Tomatoes, Diced
- 1.7 Oz. Mixed Olives, Chopped
- 1/4 C. Sliced Pepperoncinis
Instructions
- Preheat the oven to 350 degrees F. and line a baking sheet with foil or a silicone baking mat, set aside.
- Toss the cubed 1 Lb. Boneless Skinless Chicken Breast, 1 Tbsp. Hot Sh!t Seasoning, and 1 Tbsp. Olive Oil together in a small bowl.
- Transfer the chicken to the prepared baking sheet and place in the oven to bake for 10-15 minutes, then flip them over and continue to cook for another 10-15 minutes or until the chicken is cooked through and done.
- While the chicken is cooking lightly coat a small skillet with non-stick spray and heat over medium-high heat. Add in the cubed 1/2 Zucchini Squash and cook for a few minutes.
- Once done, remove the pan from the oven and allow to cool slightly. Turn the heat on the oven up to 425 degrees F. and lightly top each piece of chicken with the 1/2 C. Hummus and 2.5 Oz. Crumbled Fat Free Feta divided evenly.
- Place the baking sheet back into the oven and bake for another 5 minutes or until the feta and hummus are good and hot.
- Remove the pan from the oven and plate the chicken.
- Top with the 8 Cherry Tomatoes, 1.7 Oz. Mixed Olives, and the 1/4 C. Sliced Pepperoncinis.
