I'm so excited for this Football season and Walmart is my go-to store for all things Football! Game day grub has to be one of my all time favorite styles of food. It could be because it's always served more 'family style' and left as perfectly bites sized, snack worthy eats and treats. Or it could be because game day means the end of summer and the beginning of fall. I'm ready for the cooler weather. Bring it on!
Being a native Texan means that I'm even more into the spirit of game day. Every game day in Texas is basically a small holiday. We take our football and our game day spread almost as seriously as we take our BBQ.
I've been talking about about versatility with food lately. And Pace® is as versatile as they come. It can be used as an ingredient, condiment & dipping sauce for any meal of the day. 24 Oz. Pace® Picante Sauce is another favorite of mine.
To keep with the verde theme of these nachos I added avocado and some Mexican style jack cheese - just enough to get some in every bite. Then there's some black beans and fresh pico to finish it all off!

These nachos are great as a grab-n-go bite for your next game day spread! They are full of flavor and super easy to make. Especially if you have leftover cooked chicken on hand. Just pile them up and Ban the Bland with some help from Pace®!

Ingredients:
1 Lb. Boneless Skinless Chicken Breast
1 C. Pace® Salsa Verde
7 Oz. Bag Baked Tortilla Chips
1/2 C. 'No Salt Added' Black Beans, Drained & Rinsed
1/2 C. Reduced Fat Shredded Mexican Cheese Blend
1/4 C. Fresh Pico
1/2 Avocado, Diced
Salt & Pepper to Taste
Directions:
Cook your chicken however you desire; grill, slow cook, pressure cooker, etc. I went with my pressure cooker!
Once the chicken is cooked, chop or shred it and mix it together with the 1 C. Pace® Salsa Verde.
If the meat mixture is a little too 'wet' you and put it in a medium pot on the stove over a medium heat to cook down some of the liquid.
I found everything I needed at my local Walmart. The 24 Oz. Pace® Salsa Verde was in the international isle. I grabbed the Pace® Salsa Verde and also 24 Oz. Pace® Picante Sauce because I like to have both options on hand as pantry staples!
Preheat the oven to 375 degrees F. and prepare a baking sheet by lining it with foil, parchment paper, or a baking mat.
Place the 7 oz. of tortilla chips out on the prepared baking mat and top it with the Pace® Salsa Verde chicken mixture, followed by 1/2 C. 'No Salt Added' Black Beans and 1/2 C. Reduced Fat Shredded Mexican Cheese Blend.
Place the baking sheet into the oven and bake for about 5-10 minutes or until the cheese has melted.
Divide evenly among plates, serve right away and enjoy!
