This year for the 4th of July we've got some visitors in town for a few days. Amidst the usual chaos of the holiday, I thought it was high time to make a fun, easy, little patriotic salad that could be easily tossed together and enjoyed as a festive side or even as lunch!

Yesterday, The Skinny Fork officially turned 5 years old! Can you believe?! I decided to celebrate the best way that I know how, and that's with mimosas and cake! But, instead of keeping them separate, I put them together into one AMAZING loaf cake.

It's summer and it's hot. Like real hot here in Texas. The sort of heat that will take your breath away when you step outside. There isn't a whole lot you can do to stay cool outside of water, fans, and some nice cold fruit either. One of my favorite summer fruits has to be grapefruit!
