My birthday is coming up in a week, and so of course... this just had to happen.
I've been chewing on the idea of soaking some more gummy bears, since last time was rather well enjoyed by all. With my birthday just around the corner, I wanted to change it up a bit and make things a bit more festive. And what says birthday better than cake?
One of my most favorite cakes is 'funfetti' or 'confetti' cake; white cake with plenty of rainbow colored sprinkles. So, that's sort of where the idea of this started to come together. What could I possibly soak rainbow gummy bears in that would be birthday-esque?
Ah-ha! There's a bottle of 'Cake' flavored vodka in my freezer that has been bumming around for a couple of years, so naturally that's what I decided to infuse these little guys with for plenty of birthday joy. The fun doesn't stop there thought. I didn't want to soak these gummy bears in just the cake flavored vodka, because that could be a little much and also extremely sweet, so I cut it with my next favorite birthday flavor - champagne!
Of course, to keep these a little more guilt-free I used sugar-free gummy bears, but any gummy bear (or other shape) would work just as well, so feel free to experiment. No matter which you choose though, I would definitely suggest going with rainbow colors for your gummies because they're so darn cute.
If you want these to take a while to soak, or to be nice and cold for you, just let them soak in the fridge. It will take at least 48 hours for them to soak in the fridge though. Another option would be to soak them for 12-24 hours at room temperature and then transfer them to the fridge until you're ready to serve!
These are definitely fun and easy to enjoy no matter what you might be celebrating, whether it's a birthday, holiday, or just because.
