Instant Pot Meatloaf Bites

Hey, you. Yeah, you! Did you know that you can make meatloaf in the instant pot? Well you absolutely can! I took one of my favorite meatloaf recipes that I already make in the instant pot and turned it into mini individual meatloaves. One of my favorite things about these meatloaves is that they are perfectly portioned and loaded up with sneaky hidden veggies!

Another thing that I like about these meatloaves is that they are great for making ahead as a meal prep for the week or for lunches! They also freeze and either reheat or cook up pretty well when you’re ready to enjoy them.

McGriddle Breakfast Casserole

Sometimes you just have to turn your guilty pleasures into guiltless pleasures. And while I haven’t had a McGriddle sandwich since way back from when they very first made their debut, I can appreciate the mix of sweet and savory in the form of a breakfast sandwich. So when I came across the idea for this McGriddle Breakfast Casserole, I knew I wanted to put my own twist on it.

This casserole is a whole wheat pancake batter base that’s sweetened up with some vanilla, a touch of brown sugar, and some syrup too. Jalapeno Popper Potato Skins

Potato skins are just a lot of fun to make and eat. They’re kind of the perfect vehicle to get almost anything savory into your mouth by way of finger food - which makes them absolutely perfect for game day and tailgating! I decided to take these potato skins a step further, making them into a mix of two of my favorite football food snacks; potato skins and jalapeño poppers.

Chocolate Chunk Banana Bread

I’ve made a lot of banana bread in the past, but I realized that I’d never made one that only had chocolate chunks in it! Not only that, but this one is also made with no egg and no oil! That’s right. This bread is super tasty, easy to make, and good for you too - with well under 300 calories in a huge big thick slice!

It’s that time of year where tail gating and football food is on the mind. I don’t know about you, but I always think of buffalo chicken when I think of game day eats!
