It’s that time of year where tail gating and football food is on the mind. I don’t know about you, but I always think of buffalo chicken when I think of game day eats! I decided to take some buffalo chicken and another favorite of mine, the quesadilla, and put them together into one deeeeeelish bite! And what better way to enjoy both than in the shape of a blooming ring!
These pull apart bites of buffalo chicken and cheesy goodness are perfectly dipable, drinkable, and perfect for your game day snack line up OR as part of a dinner! I served mine for dinner with a side salad, but you better believe they’ll show up again on my next game day spread.
I like to served these with more buffalo sauce and either some ranch or blue cheese dressing for dipping options. Another thing that’s good about these quesadillas is that they are a finger food and have little mess to go along with them. They’re an easy grab-and-go bite with little time and effort on the backend. And I do mean just a little.

Blooming Buffalo Chicken Quesadilla Ring
Ingredients
- 10 Low Carb Tortillas
- 1 1/2 C. Cooked & Shredded Chicken
- 2 C. Shredded Reduced Fat 'Mexican Blend' Cheese
- 1/2 C. Reduced Fat Blue Cheese Crumbles
- 1/2 C. Buffalo Sauce
- 1/4 C. Sliced Green Onions
Instructions
- Preheat the oven to 375 degrees F. and cover a round baking sheet with foil; give it a light spritz of non-stick cooking spray and set aside.
- Cut the 10 tortillas in half.
- Mix together the 1 1/2 C. cooked chicken, 2 C. shredded cheese, 1/2 C. blue cheese, 1/2 C. buffalo sauce and 1/4 C. green onions.
- Scoop about 1 /2 Tbsp. of the chicken mixture into each tortilla half and roll up into a cone shape.
- Place the cone on the prepared baking sheet; rinse and repeat with the remaining tortilla halves to form your ring!
- Transfer the baking sheet to the oven to bake for 15-20 minutes.
- Once done, remove from the oven and enjoy right away!
