Hey, you. Yeah, you! Did you know that you can make meatloaf in the instant pot? Well you absolutely can! I took one of my favorite meatloaf recipes that I already make in the instant pot and turned it into mini individual meatloaves. One of my favorite things about these meatloaves is that they are perfectly portioned and loaded up with sneaky hidden veggies!
Another thing that I like about these meatloaves is that they are great for making ahead as a meal prep for the week or for lunches! They also freeze and either reheat or cook up pretty well when you’re ready to enjoy them.
These mini meatloaves cook up in just 20 minutes in the instant pot and it gives you a whole 14 mini meatloaves! And if you have two per serving, that gives you 7 servings of tasty meatloaf goodness that everyone is sure to enjoy; kids and adults alike!
I served mine with a side of homemade mashed potatoes and some steamed peas.
Instant Pot Meatloaf Bites
Ingredients
- 1 Lb. Lean Ground Beef
- 1/2 C. Grated Zucchini
- 1/2 C. Whole Wheat Bread Crumbs
- 1/2 White Onion, Diced
- 1/2 Green Bell Pepper, Diced
- 1/4 C. Grated Carrots
- 6 Oz. Tomato Sauce
- 2 Tbsp. Tomato Paste
- 2 Whole Large Eggs
- 2 Minced Garlic Cloves
- Salt & Pepper to Taste
Instructions
- Lightly coat the inside of 2 silicone egg bite molds and set aside. Fill the base of the instant pot with 1 1/2 C. water.
- Mix together the 1 Lb. Lean Ground Beef, 1/2 C. Grated Zucchini, 1/2 C. Whole Wheat Bread Crumbs, 1/2 White Onion, 1/2 Green Bell Pepper, 1/4 C. Grated Carrots, 3 Oz. of the Tomato Sauce, Tbsp. Tomato Paste, 2 Whole Large Eggs, 2 Minced Garlic Cloves, and Salt & Pepper to Taste.
- In a small bowl, mix together the remaining 3 Oz. tomato sauce and 1 Tbsp. tomato paste along with salt & pepper to taste.
- Spoon the sauce evenly among the holes of the prepared molds.
- Divide the meat mixture evenly among the mold segments.
- Stack the molds onto the trivet and lower them into the instant pot.
- Secure the lid and set the steam valve to sealed.
- Cook on high pressure for 20 minutes.
- Once done, allow the pressure to release naturally or do a quick release and remove the molds from the instant pot.
- Use a spoon to remove the meatloaves from the mold and enjoy right away!
