Giant Instant Pot Pancake
It’s been… a week. And I couldn’t be more stoked that it’s Friday. Normally Friday doesn’t mean a whole lot to me since I’m technically ‘always working’, but today means that my kiddo will be out for school for the next week and I can’t wait for the bit of a rest! To celebrate, I decided to try and make something epic. Something BIG.
That’s where this Giant Instant Pot Pancake comes in! This big boy is about an inch and a half tall and nearly takes up an entire dinner plate. That’s how big it is! It’s definitely not meant for just one person, unless you’re spreading it out over a couple of days. And it’s for sure a fork and knife sort of situation here…
McGriddle Breakfast Casserole
Sometimes you just have to turn your guilty pleasures into guiltless pleasures. And while I haven’t had a McGriddle sandwich since way back from when they very first made their debut, I can appreciate the mix of sweet and savory in the form of a breakfast sandwich. What’s a girl to do?
Instant pot (or any electric pressure cooker) to the rescue! These Blueberry Pancake Bites are whipped up quickly and cook right in the instant pot in all of 10 minutes. The end result is a magical cross between a pancake and a muffin that is as delicious as it is portable…

It’s no secret that Halloween my favorite holiday and I always like to do something a little special for it. My little girl is quite a pancake fiend. I would venture guess that she eats pancakes for breakfast just about every other morning. Except for Saturday; that is 'donut' day around here.
At any rate, with all the great pumpkin flavors going around this time of year, I thought it would be a great time to make a healthier pumpkin pancake!
No matter your age or pancake preference, these whole wheat pumpkin pancakes are a great way to start off any Fall morning! They are really easy to mix up and cook. Plus, they taste amazing with just a subtle hint of pumpkin and spice in there…

Originally when I posted this back in May of 2013 Mother's day happened to fall on my parents anniversary and unfortunately the day hadn't started off well for either me or my mother. I had the dilemma with my laptop, which I now have back, and my mom was having some car issues.
Needless to say, I went to pick her up and us three girls (my mother, daughter, and myself), decided to stop and have brunch in downtown Austin at a local hot spot...
