So you know those strawberry shortcake ice creams with the crumbly bits of strawberry crunch on the outside? So I may have come across the crumbs, and yes, you can actually buy them! Now what does one do with strawberry crunch crumbs? Well, obviously make some sort of tasty strawberry sweet! That’s when the idea for this Strawberry Crunch Monkey Bread came to be.
Take it as a breakfast, brunch, or even dessert. This nostalgic twist on monkey bread has to be one of my new favorites. It’s ridiculously easy to make too, just as most monkey breads are. Now, there really wasn’t a whole lot to do in the ways of making this lightened up. But, I did sub out some of the sugars for natural sweeteners.
The strawberry crunch crumbs are part of what makes this Strawberry Crunch Monkey Bread what it is. A quick search online sound find you what you’re looking for! The ones that I used were Yum Crumbs and they come in a lot of fun flavors. No that isn’t a promotion and I wasn’t paid - they’re just what I found and what I used.
This monkey bread reheats and eats well enough. I store mine in the fridge and zap in the microwave for a quick sweet treat or breakfast.
Strawberry Crunch Monkey Bread
Ingredients
- 1 (20 Oz.) Can Light Strawberry Pie Filling
- 1 C. Fresh Strawberries, Diced
- 2 Tbsp. Brown Sugar & Sweetener Blend
- 2 Tbsp. Light Butter, Melted
- 1 Tbsp. Sugar
- 1 Tbsp. Natural Sweetener
- 1 Tsp. Vanilla Extract
- 2 (16 Oz.) Cans Refrigerated Wheat Biscuit Dough
- Strawberry Crunch Crumbs
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a bundt pan with non-stick baking spray; set aside.
- In a large bowl, mix together the 1 (20 Oz.) Can Strawberry Pie Filling, 1 C. Fresh Strawberries, 2 Tbsp. Brown Sugar & Sweetener Blend, 2 Tbsp. Light Butter, 1 Tbsp. Sugar, 1 Tbsp. Natural Sweetener and 1 Tsp. Vanilla Extract.
- Slice each of the biscuits into 6 pieces.
- Stir the biscuit pieces into the strawberry mixture to evenly coat it all.
- Pour the strawberry coated biscuit dough into the prepared bundt pan and place it into the oven to bake for 45-50 minutes or until the dough is all cooked through.
- Once done, remove the pan from the oven and allow it to slightly (maybe 5 minutes.)
- Place a large plate over the top of the bundt pan and flip both over to turn the monkey bread out onto the large plate to continue to cool.
- Sprinkle the strawberry crunch crumbs over the top.
- Enjoy right away!
