Maple Pecan Blended & Baked Oats
Ingredients
- 1 C. Dry Uncooked Quick Oats
- 1 Whole Banana
- 1/2 C. Unsweetened Almond Milk
- 1 Tsp. Baking Soda
- 1 Tsp. Vanilla
- 1/8 Tsp. Salt
- 2 Tbsp. Chopped Pecans
- Optional: 2 Tbsp. White Chocolate Chips
- 2 Oz. Fat Free Cream Cheese, Room Temperature
- 1 1/2 Tbsp. Maple Syrup
- 1 1/2 Tbsp. Brown Sugar Blend
- 1 Tbsp. Butter, Room Temperature
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekin dishes with non-stick baking spray; set aside.
- Blend together the 1 C. Dry Uncooked Quick Oats, 1 Whole Banana, 1/2 C. Unsweetened Almond Milk, 1 Tsp. Baking Soda, 1 Tsp. Vanilla, and 1/8 Tsp. Salt in a blender, food processor, or in a cup with an immersion blender.
- Divide the mixture evenly between the ramekins and top each with 1 Tbsp. Chopped Pecans and 2 Tbsp. White Chocolate Chips if desired.
- Place them in the oven to bake for 25-30 minutes.
- While the oats are baking, stir or blend together the 2 Oz. Fat Free Cream Cheese, 1 1/2 Tbsp. Maple Syrup, 1 1/2 Tbsp. Brown Sugar Blend, and 1 Tbsp. Butter.
- Once the oats are done, remove them from the oven and top with the cream cheese sauce divided evenly to enjoy right away or store in the fridge for 3-5 days to reheat and enjoy later!
