It was my brother’s birthday celebration this past weekend, and it sure was a lot different from how it was last year for sooo many reasons. Thankfully vaccinations are in place and we got to celebrate together once again! In lieu of a cake though, my brother wanted blondies this year which I am totally down for! Don’t get me wrong, I love cake as much as the next girl, but there’s something to be said about a good blondie.
These blondies are my healthified take on the ones that you’ll find at one of those chain restaurants. It was always my most favorite dessert there. What with the warm blondie with white chocolate chips, some vanilla ice cream, and that AMAZING maple cream cheese sauce on top. Mmmm…
These are made from scratch but NEVER FEAR they are SO simple and easy to make, you won’t believe it. The batter for the blondies themselves all comes together in one bowl. And the baking gives you the perfect amount of time to whip up the easy peasy maple cream cheese sauce.
Do NOT over bake these blondies. You want them cooked through, but keep in mind that this is not a cake and they should be as moist as brownies tend to be.
Blondies + Maple Cream Cheese Sauce
Ingredients
- 1 C. Brown Sugar/Sweetener Blend
- 1/3 C. Softened Butter
- 1 Whole Large Egg
- 1 Tbsp. Vanilla Extract
- 1 C. Flour
- 1/2 Tsp. Baking Powder
- 1/8 Tsp. Baking Soda
- 1/8 Tsp. Salt
- 2/3 C. White Chocolate Chips
- 6 Tbsp. Maple Syrup
- 1/4 C. Butter
- 8 Oz. Reduced Fat (Neufchatel) Cream Cheese, Room Temp.
- 6 Tbsp. Brown Sugar/Sweetener Blend
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
- In a large bowl, or the base of a stand mixer, beat together the 1 C. brown sugar blend, 1/3 C. butter, 1 egg, and 1 tbsp. vanilla.
- Stir in the 1 C. flour, 1/2 Tsp. baking powder, 1/8 Tsp. baking soda, and 1/8 Tsp. salt.
- Fold in the 2/3 C. white chocolate chips.
- Transfer the mixture to the prepared baking dish and bake for about 20-25 minutes. DO NOT OVER BAKE.
- Once done, remove from the oven and set aside to cool slightly.
- While the blondies are cooling, combine the 6 Tbsp. syrup and 1/4 C. butter together in a small sauce pan.
- Cook over low heat until the butter is melted.
- Add in the 8 Oz. cream cheese and 6 Tbsp. brown sugar blend and continue to cook, stirring constantly, until the cream cheese has melted.
- Once done, remove from heat, cut your blondies into 9 squares, and serve right away with a drizzle of the sauce on top.
