If you love blondies and you love circus animal cookies then you are going to go nuts over these Circus Animal Cookie Blondies! Blondies are basically a vanilla (non-chocolate) version of brownies. So they’re a bit more dense and moist than cake.
These blondies are super easy to make and are whipped up all in one bowl. Plus, look at how colorful they are! With circus animal cookies baked right in, they have that frosted cookie crunch among the sprinkles and blondie. It’s basically heaven on a plate for me since circus animal cookies are one of my favorite guilty pleasures.
The only thing I did to change up these blondies and make them just a touch better-for-you was to swap half of the sugar for a natural sweetener that measures cup for cup like sugar. Stevia, splenda, monk fruit, any of these will work!
I also used rainbow nonpareils and large rainbow ‘crunch’ sprinkles. (You know, the sort that you find on cosmic brownies.) I used them to add more pops of color and of course a little bonus texture in the blondies as well. But feel free to use your favorite rainbow sprinkles, jimmies, or nonpareils.
Circus Animal Cookie Blondies
Ingredients
- 3/4 C. Room Temperature Butter
- 1/2 C. White Sugar
- 1/2 C. Natural Sweetener
- 3 Whole Large Eggs
- 1 1/2 Tsp. Vanilla Extract
- 2 C. Flour
- 1 Tsp. Baking Powder
- 2 C. Circus Animal Cookie Pieces
- 1/4 C. Rainbow Sprinkles
Instructions
- Preheat the oven to 325 degrees. F. and light a 13x9” baking dish with non-stick baking mix; set aside.
- In the base of a stand mixer fitted with the paddle attachment, beat together the 3/4 C. butter, 1/2 C. sugar, and 1/2 C. sweetener until light and fluffy.
- Add in the eggs one at a time along with the 1 1/2 Tsp. vanilla. Beat together until well combined.
- Mix in the 2 C. flour and 1 Tsp. baking powder until the dough starts to come together.
- Add in the 2 C. cookies and 1/4 C. sprinkles and stir until just combined.
- Do not over mix or the sprinkles will bleed their color out into the dough!
- Transfer the dough to the prepared baking dish and smooth out.
- Place the dish in the oven to bake for about 30 minutes or until the edges are browning and the middle is set.
- Once done, remove from the oven and set aside to cool for about 15 minutes before slicing into # pieces to enjoy right away.
- Sore leftovers covered in a dry place for 3-5 days.
