PB&J Baked Oatmeal
Ingredients
- 200 G. Rolled Oats
- 2 Whole Ripe Bananas
- 60 G. Peanut Butter Powder
- 420 Ml. Unsweetened Vanilla Almond Milk
- 1 Tsp. Baking Powder
- 120 G. Fresh Strawberries
- 6 Tbsp. Fat Free Strawberry or Vanilla Greek Yogurt
- 3 Tbsp. Strawberry Jam/Preserves
- Optional Toppings: Extra Peanut butter or jam for drizzling.
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
- Mix together the 200 G. Rolled Oats, 2 Whole Ripe Bananas, 60 G. Peanut Butter Powder, 420 Ml. Unsweetened Vanilla Almond Milk, and 1 Tsp. Baking Powder.
- Pour the mixture into the prepared baking dish. (I used my immersion blender to blend the oats a bit because I like a smoother baked oatmeal.)
- Top with the 120 G. Fresh Strawberries, 6 Tbsp. Fat Free Strawberry or Vanilla Greek Yogurt, and 3 Tbsp. Strawberry Jam/Preserves.
- Place into the oven to bake for about 45 minutes or until the edges are browned and the middle is set.
- Once done, remove from the oven and allow to cool slightly before cutting into 6 pieces to enjoy right away or store in the fridge to easy breakfast through the week!
- Drizzle with any additional Peanut butter or jam!
