There is only ONE more month of school left here and it is busier than ever! What does that mean? Easy cheesy weeknight meals are where it’s at! That’s where this Cheesesteak Macaroni Casserole comes in. Not only is this casserole easy AND cheesy, it’s also one that you could make ahead of time and then toss in the oven for the final step when it’s time for dinner!
So what makes this casserole ‘cheesesteak’ anyway? Well, that would be the beef, onion, and bell pepper in there. Yep. It’s at simple as that when it comes to this dish. Plus, it’s made with just a handful of ingredients which are mostly household kitchen staples anyway.
This dish is a pretty easy way to try and lure the kiddos into eating their veggies too. Hopefully they’ll be too distracted with the cheese and meat to even notice anything else!
If you want to make this casserole ahead of time, follow the instructions up until baking. Instead, cover and store in the fridge until it’s time to eat. Then toss it in the oven for about 30 minutes and you’re good to go! It doesn’t get a whole lot easier than that.
Cheesesteak Macaroni Casserole
Ingredients
- 1 Lb. Extra Lean Ground Beef
- 1 Green Bell Pepper, Chopped
- 1 Onion, Chopped
- 1 Tsp. Minced Garlic
- 6 Oz. Reduced Fat Velveeta Cheese
- 8 Oz. Macaroni Noodles, Cooked & Drained
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8" or 9x9" baking dish with non-stick spray and set aside.
- Lightly coat a large skillet with non-stick spray.
- Add the 1 Lb. ground beef, 1 green bell pepper, 1 onion, and 1 Tsp. garlic and cook over medium-high heat until the meat is cooked through and the veggies are tender.
- Drain if need be.
- Add the 6 Oz. velveeta to the skillet and stir to combine.
- Stir the meat and cheese mixture together until everything is evenly coated.
- Season with salt and pepper to taste and scoop it all out into the prepared baking dish.
- Cover with foil and place in the oven to bake for about 15-20 minutes.
- Once done, remove from the oven and divide evenly among bowls or plates to enjoy!
