Everything Bagel Breakfast Bowl
Ingredients
- 4 Mini Bagels, Cut into 1/2" Cubes
- 4 Tbsp. Butter, Melted
- 2 Tbsp. Everything Seasoning
- 4 Whole Eggs
- 8 C. Fresh Baby Spinach
- 4 (100 Cal.) Packs Avocado
- 16 Cherry Tomatoes, Halved
- 4 Tbsp. Crumbled Goat Cheese
Instructions
- Preheat the oven to 425 degrees F. and line a baking sheet with foil or a silicone baking mat; set aside.
- Place the cut up 4 Mini Bagels, 4 Tbsp. Butter, and Tbsp. Everything Seasoning into a medium bowl and toss or stir to combine and coat evenly.
- Transfer to the oven to bake for 10 minutes, stirring about halfway through.
- While the bagel bites are toasting up, cook the 4 Whole Eggs as desired. (I cooked mine to a hard boil.)
- Lightly coat a medium skillet with non-stick spray and heat over medium-high heat. Add in the spinach and cook until wilted.
- Once everything is done, divide the spinach and bagel bites evenly among bowls. Place one egg on each bowl, along with 4 of the halved cherry tomatoes, 1 package of the Avocado, and 1 Tbsp. Crumbled Goat Cheese. Enjoy right away!
